Heyam’s Authentic Arabic Babaganough
Being a vegetarian, I eat a lot of the usual vegetarian staples that originate from around the world. I’ve just had the most enjoyable babaganough I can ever remember having.
Heyam’s Authentic Arabic Babaganough is something my brother picked up at our local Whole Foods. This paste has the best balance of flavors…I can’t think of anything to complain about. The eggplant is not at all bitter. There is a slight roasted taste that is enhanced, but not overwhelmed, by the tahini. The other three ingredients: lemon juice, garlic, and salt also do nothing but enhance the flavor without trying to be the stars themselves. It has a smooth, but not creamy, texture. It’s not at all grainy, nor is it over-encumbered by seeds.
Since this is sold at Whole Foods by a regional company (Taos Food Center, in Taos, NM), I have to assume that this is going to be more-or-less local to the NM region.
If you can get it, I very highly recommend it.
